Sauvignon Blanc is always a bit of a chameleon, reflecting the terroir of the grapes and conditions of the vintage. Filled with crisp and clean aromas of white nectarine, crunchy pear and honeydew melon the palate is all wrapped up with refreshing lemon grass and fresh herbs. Refreshingly tasty.
Interesting Facts: Harvested September 13th at 23.5 Brix. Thank fermentation tempreatures 59-63 F for 14 days, slow cooler fermentation to retain delicate fruit aromas and flavors. Racked to 10 barrels at 1.0 Brix and barrel fermentation with sur lee aging. Barrels were stirred once per day for one week.
Composition: 100% Sauvignon Blanc
Aging: 52% Barrel Fermented and aged for 12 months in French Oak (44% 2016 barrels, 56% 2014 & 2013 barrels), 48% Stainless Steel.
