Visitor's Center | Wine Tastings Tips How to Taste Wine The taste of wine is extremely subjective. Beyond the four basic taste sensations- bitter, sweet, salt, and acid-people discover all sorts of taste references in wine. The five steps of the wine tasting ritual are; See, smell, swirl, sip and savor. See Pour one ounce of wine into a wine glass and grasp the stem so your hand does not heat the wine. Hold the glass up to the light and evaluate the wine’s clarity. Is it clear or cloudy? Also note the color of the wine. Is it bright and intense or pale or dull? Smell Your first nose-in-the-glass sniff is the most accurate. Check for the aroma - an odor particular to the grape and bouquet - a complexity of scents formed only after the wine ages. Do you smell hints of citrus, spice or fruit? Try to identify what you smell. Swirl Swirl the wine in the glass. This aerates it and enhances the smell. Smell the wine in the glass again. Can you note any additional aromas? Sip Sip the wine and swish it around in your mouth so that it touches all parts of your tongue - then hold the wine on your palate while breathing in through your mouth. Note the body of the wine (the impression the wine makes in your mouth) and any tartness, bitterness or sweetness. Does it feel heavy or light? Savor Pay attention to the finish (aftertaste), for some flavors appear only now. Write down your impressions, your likes and dislikes. This will help you clarify what types of wine you prefer.
